THE GINGER PIG STORY

The Ginger Pig is a premium London butcher, specialising in nose to tail butchery of native breed, high welfare and naturally reared animals. We are led by masters of their craft with decades of experience - from butchers, to bakers to chefs - to serve only the tastiest ingredients for the proudest home cooks.

Established in 1998, the Ginger Pig story began when our founder Tim Wilson purchased three Tamworth pigs - Milly, Molly and Mandy - and developed an interest in farming rare and native breeds. In those days, the prime cuts were in demand, so he found he was often left with plenty of high-quality meat. Rather than see it go to waste, he turned to the art of sausage making and was soon invited to open one of the first stalls in London's Borough Market. Word quickly spread and we found our home - now operating butchery shops and delis in eight wonderful London neighbourhoods.

We are proud to work with British farmers who champion rare breeds and traditional, high welfare and sustainable farming practices. This is not only better for the animals and the land, but tastes better too. When animals are reared well they grow more tender and flavourful meat, with fat growing exactly where you’d want it.
