A robust, meaty sausage seasoned with oregano, chilli, black pepper and tomato. Ideal for braises and casseroles, can also be removed from the casing and chopped into little pieces to fry until crisp for a delicious pasta dish.
All of our sausages are generously sized and handmade every week by our dedicated sausage team, using the perfect blend of pork shoulder and belly and the same high-quality meat you'll find in in our counters.

Sear the sausages to give them a nice colour then slowly braise with aromatic veg and a sauce and/or white beans until completely tender.
Or, for adding to a pasta dish, remove and discard the casings, chop the sausage meat into pieces and fry in a little olive oil until crisp. You can then use the flavoured oil to fry your garlic and other pasta sauce ingredients.
Please remove all paper wrapping from your meat and place it on a plate in the fridge away from cooked items. This allows air to circulate around it properly, helping to prolong shelf life.
Average shelf life: 2-3 days.
Vacuum-packed meat can be put straight in the fridge and has a longer shelf life.
