Remove from packaging and shake off any excess marinade. Place over the glowing coals of the barbecue and cook for 2-3 minutes on each side to get a nice crust. Move away from the hot coals – either on a higher grill shelf or to the side of the grill so that the steak isn’t directly over the coals – and finish cooking over indirect heat. Allow another 8-12 minutes depending on how you like your steak cooked – if using a temperature probe, cook to around 50°C for rare and 55°C for medium-rare.

Please remove all paper wrapping from your meat and place it on a plate in the fridge away from cooked items. This allows air to circulate around it properly, helping to prolong shelf life.

Average shelf life: 2-3 days.

Vacuum-packed meat can be put straight in the fridge and has a longer shelf life.
