A hearty, meaty sausage flavoured with garlic, pepper and fennel, best suited to braising and slow cooking. Can also be removed from the casing and chopped into little pieces to fry until crisp for a delicious pasta dish.

Sear the sausages to give them a nice colour then slowly braise with aromatic veg and a sauce and/or white beans until completely tender.
Or, for adding to a pasta dish, remove and discard the casings, chop the sausage meat into pieces and fry in a little olive oil until crisp. You can then use the flavoured oil to fry your garlic and other pasta sauce ingredients.
Please remove all paper wrapping from your meat and place it on a plate in the fridge away from cooked items. This allows air to circulate around it properly, helping to prolong shelf life.
Average shelf life: 2-3 days.
Vacuum-packed meat can be put straight in the fridge and has a longer shelf life.
