Preheat oven to 200°C Fan. Remove wellington from the fridge and glaze the pastry all over with an Egg wash (1 whole Egg and 1 tablespoon Milk whisked). Continue cooking according to size: 2 person Wellington i. Reduce the temperature of the oven to 190°C Fan ii. Place the wellington in the oven and roast for - 35 mins medium rare, 40 mins medium, or 45 mins medium well. 4 person Wellington i. Reduce the temperature of the oven to 190°C Fan ii. Place wellington in the centre of the oven and roast for - 40 mins medium rare, 45 mins medium, or 50 mins medium well. 6 person Wellington i. Reduce the temperature of the oven to 180°C Fan ii. Place wellington in the centre of the oven and roast for - 45 mins medium rare, 50 mins medium, or 55 mins medium well. Remove from oven, cover in foil and allow to rest for 20 mins
