A magnificent, large chicken that is famous for its creamy-white meat and generous ratio of breast. Fed a diet of milk-soaked cereal, it is wonderfully succulent and tender, with even fat distributed throughout the meat that melts to baste during cooking. With fully grown capons able to feed 6-8 people, they are the favoured Christmas centrepiece for many households in France, excellently suited to roasting at around 160°C.
A capon is a male chicken that has been castrated, meaning that the birds can be grown to a larger size without their hormones spoiling the flavour or making the meat tough. Ours are the same natural, slow growing breed as our corn-fed chickens, 100% free roaming in the woodlands of Lande. They are fed a natural cereal diet of around 80% locally grown corn that is enriched with Milk, plus a feast of grubs and bugs foraged in Europe’s largest forest.
