How to… Cook our Beef Wellington

Our fail safe guide to cooking your Ginger Pig Wellington this Christmas.

Method

6 Person Wellington

  1. Pre heat oven to 200’C Fan
  2. Remove wellington from the fridge and glaze the pastry all over with an egg wash (1 whole egg & 1 tablespoon milk whisked).
  3. Reduce the temperature of the oven to 180’C Fan
  4. Place the wellington in the centre of the oven and roast for 45 mins – medium rare, 50 mins medium or 55 mins medium well.
  5. Remove from oven, cover in foil and allow to rest for 20 mins.

4 Person Wellington

  1. Pre heat oven to 200’C Fan
  2. Remove wellington from the fridge and glaze the pastry all over with an egg wash (1 whole egg & 1 tablespoon milk whisked).
  3. Reduce the temperature of the oven to 190’C Fan
  4. Place the wellington in the centre of the oven and roast for 40 mins – medium rare, 45 mins medium or 50 mins medium well.
  5. Remove from oven, cover in foil and allow to rest for 20 mins.

2 Person Wellington

  1. Pre heat oven to 200’C Fan
  2. Remove wellington from the fridge and glaze the pastry all over with an egg wash (1 whole egg & 1 tablespoon milk whisked).
  3. Reduce the temperature of the oven to 190’C Fan
  4. Place the wellington in the oven and roast for 35 mins –medium rare, 40 mins medium or 45 mins medium well.
  5. Remove from oven, cover in foil and allow to rest for 20 mins.


ALL INSTRUCTIONS ARE GUIDELINES, PLEASE ENSURE THAT YOU PROBE THE CENTER OF THE MEAT TO ENSURE THAT THE CORRECT TEMPERATURE HAS BEEN REACHED AS ALL OVENS ARE DIFFERENT
