Take your meat out of the fridge at least 30 minutes before cooking - the bigger the cut the more time it needs to come to room temperature. Remember, meat is a muscle and needs to relax before it is cooked.
Proper Pork Chops are best with woody or sweet flavours. Try browning off in a hot, high sided frying pan before finishing with cider, thinly sliced apple, plently of black pepper and sage under a lid.
The mighty double-loin, Barnsley chop stands up to a lot of flavour - try toasted and ground cumin, coriander and mustard seeds with a little lemon zest, rubbed all over the chops and left to marinate for a few hours. Sear in a hot pan for a slightly pink middle.
The Best End Chops are delicious marinated for a couple of hours with lemon, rosemary and olive oil, then sear on the barbecue hot and fast leaving the chops sligtly pink in the middle.
The Primes Rib - Make sure you season just before you put the prime rib into the pan, otherwise you will start to draw out moisture, creating a wet surface and making it harder to get a decent crust. Beef prime rib rewards slow, patient cooking after an initial hot sear. Remember to season boldly and roast at around 180°C for 15 minutes per 450g for a perfect rare prime rib. If you want to be absolutely sure about how ‘done’ your prime rib is, insert a meat thermometer into the centre: it should read approximately 52°C for rare, 55°C for medium rare and 58°C for medium.
