Because the chop is taken from right across the shoulder, it contains a piece of bone and often a small seam of cartilage, which falls out easily after slow cooking.

Cooking on the bone gives great flavour and depth to the sauce, and the meat is so tender it can be cut with a spoon. Because the chop is taken from right across the shoulder, it contains a piece of bone and often a small seam of cartilage, which falls out easily after slow cooking.

Try braising with plenty of garlic, rosemary and a half-and-half mixture of white wine and chicken stock for a succulent, comforting supper. Just add mash.

Storage Advice

Please remove all paper wrapping from your meat and place it on a plate in the fridge away from cooked items. This allows air to circulate around it properly, helping to prolong shelf life.

Vacuum-packed meat can be put straight in the fridge and has a longer shelf life.
