These carefully selected legs of pork are taken from the very same rare-breed pigs that produce the meat we sell in our counter. Although we dry-cure our bacon, we wet cure the hams to ensure that the cure runs throughout the meat. They're brined for a week, transferred to fresh cure for a further 4-6 days and then gently simmered in water until cooked.
