Slow-roasted, this is a very juicy cut thanks to its great fat marbling. A good choice for a large gathering as a whole shoulder is pretty big. This is the cut of choice for the very best pulled pork with crispy crackling. Diced or minced, it makes excellent casseroles, sausages, terrines and pies.
