John has been with us for over 20 years. He started life at The Ginger Pig in our very first shop on a block in Borough Market alongside our founder Tim Wilson. Since then, he has been a stalwart member of the team and now works part time in our Wanstead shop. He has been a butcher for over 55 years. "Butchery is great as a career choice - there are plenty of different job opportunities".
Erika has been with us for 10 years. She started on the deli but soon became interested in what the butchers were doing, watching them cutting meat, serving customers, giving meat prep and cooking advice. She started helping on the butchery side and was trained up. She is now manager of our Hackney shop on Lauriston Road.
"It's a fascinating job and there is always a new skill to pick up or something to learn. My favourite part of the job is communicating with the customers and building relationships. They come to their local butcher with questions and trust in me to give good advice. I feel privileged that people trust my knowledge and take my advice and then come back and say how delicious their meal was. It's the best feeling. I also love working with different cuts and using my creativity to prepare something new, tasty and interesting."
Lynsey started life at The Ginger Pig five years ago manager of our Clapham shop. After a couple of years, she moved into a more general role, which allowed her an overview of the company as a whole and an insight into the day to day operations of our shops across London. A highlight was when she project managed the opening of our Wanstead shop, after which she was offered a directorship. She now oversees operations company wide and recently launched our new shop in Loughton, Essex. "The last few years have been the best of my professional life. I never take for granted how lucky I am to do a job that I love and work for a business that I’m proud to say I work for."
Sam started with us four and half years ago as a deli assistant in our Clapham shop. She then moved to our Marylebone shop three days a week to work in the kitchen and develop her skills, after which she went back to Clapham full time. She then had the opportunity to become manager of our deli counter in Wanstead, which gave her experience of a third shop. She then came back to manage our Clapham deli, as it was nearer home.
"After a while, I wanted something a bit more challenging and also to try an office-based role, which I've never done before. I now manage the day to day running of our wholesale accounts. I love what I do now, working in Borough Market’s head office with the best group of people. The office team all help in shops at Christmas, our busiest time of year, and I'm really looking forward to getting back to Clapham to see my old customers."
Jess has worked in the butchery industry for ten years. She trained as a butcher on the Chatsworth Estate in Derbyshire and joined us part time when she was 19, after moving to London for university. She worked in our Marylebone, Borough Market and Hackney shops for three years. After a brief interlude to pursue other things, she recently came back to us to help launch our new online shop as Online Operations Manager and she also manages procurement. She is also currently working on the aptly named Girl on the Block, which will be published by Double Dey Harper Collins in Spring 2019.
"Ginger Pig is where I learned the most in my career, and its truly my home. I've been and gone and done other things whilst at university and studying my Masters, but always gravitated back towards GP because I don't think anyone else in this industry compares. I'm really looking forward to helping our online business grow, and continuing to work in our amazing Head Office at Borough Market."
Before he joined us, Andrei had worked in a number of different industries, from engineering to restaurants. He came to us in 2012, and started working on the deli and assisting on the butchery side. He is now the manager of our Marylebone shop.
"I loved working hard alongside the butchers and learning new skills for my new life in butchery. After two years as an apprentice, I took the next step as a full time butcher in Ginger Pig Marylebone. The passion and curiosity to learn more and more, made me choose butchery as a career. Thanks to The Ginger Pig I have also developed new skills and learnt about breeds and farming. My favourite thing about the job is customer interaction and people's interest and excitement when the butchers cut their meat in front of them. We build that special relationship with our customers and it's really rewarding."
Liam has been with us for just over three years. He joined as Wanstead shop manager and has recently been managing our wholesale orders. A butcher for fifteen years, he started working on a supermarket counter and fell in love with the trade. "The thing I love about the job is meeting lots of new people, from colleagues to customers." His favourite meat is onglet steak.
