Over 25 years ago, Tim Wilson was among the very first stall holders in Borough Market. He started The Ginger Pig alone on a butcher's block in the market and we haven't looked back since then. Nothing could be more appropriate, or make us prouder, than bringing you The Original Beef Butchery Class in our new home (next to Bread Ahead) at the heart of the London food scene.
